Your commissary kitchen must provide:
- Restrooms
- A handwashing sink
- Approved commercial kitchen equipment
- Space for dishwashing and food preparation
- Labeled storage space
- A three-compartment sink for washing, rinsing and sanitizing
- Food preparation sinks (if needed)
- An approved public water source or commercially bottled water
- Proper wastewater disposal through a service sink, city sewer, or YHD-approved septic system
